Most come together in 30 minutes or less, several require zero cooking at all, and almost all of them mean one pan to wash. Rotisserie chicken gets saucy and scrumptious in this time-saving spin on the classic. Instead of ground beef, shredded rotisserie chicken soaks up a sweet-savory-tangy sauce with no added sugar… pile it onto slider buns and dig in. Use whatever mustard you love (yellow keeps it classic, but Dijon or spicy brown are great too), and add a dash of maple syrup if you like it sweeter. In my house, these are known as sloppy Joys!

This is one of those “dump it in and let it do its thing” recipes that feels almost too easy. Chicken, salsa, taco seasoning — that’s it. You walk away and come back to juicy, flavorful pulled chicken that makes about 5 cups, holds up beautifully in the fridge, and freezes great. Then take it in a hundred directions: tacos tonight, grain bowls tomorrow, lettuce cups the next day, coleslaw after that. This one is creamy, crunchy, and endlessly adaptable — pile it on whole grain toast, scoop it up with crackers, spoon it over greens, or go low-carb and serve it on crisp apple slices. It comes together in one bowl with no cooking required, which makes it a weeknight hero.

A protein-packed twist on my Buffalo Coleslaw that’s just too good to pass up! The creamy buffalo sauce blends up in seconds, then gets tossed with crunchy cabbage, carrots, and shredded chicken. Top with scallions and jalapeños and drizzle on extra hot sauce. Bonus: the recipe makes extra sauce on purpose so you can stash it in the fridge to use as a veggie dip or sandwich spread all week.

Let the slow cooker do the heavy lifting on this one! Butternut squash, bell pepper, jalapeño, and salsa verde simmer away while the chicken gets fall-apart tender, then beans and shredded chicken go back in for a hearty, fiber-rich bowl.
