20 Easy Chicken Recipes
Protein-packed chicken dinners that come together fast, and taste like you fussed.
Winner, winner, chicken dinner! When you’re staring into the fridge at 6pm with zero plan, chicken is always the answer. It’s lean, it’s loaded with protein, and it plays well with just about every flavor on the planet.
I’ve rounded up 20 of my favorite easy chicken recipes — sheet-pan suppers, one-skillet wonders, crunchy slaws, cheesy quesadillas, slow-cooker set-and-forgets, and a cozy soup to finish. Most come together in 30 minutes or less, several require zero cooking at all, and almost all of them mean one pan to wash. Serve any of them with a fiber-rich side like brown rice, quinoa, or a sweet potato and you’ve got a perfectly balanced plate. Hallelujah!
Hoping you find a bunch to come back to again and again!

Everything’s betta with a little bruschetta! Juicy Roma tomatoes, fresh basil, garlic, and balsamic get spooned over simply seasoned chicken breasts for a low-carb spin on the classic — 27 grams of protein, ready in under 30 minutes, and you can make it in a skillet or on the grill. Chop the topping first so the tomatoes have time to mingle while the chicken cooks. And when strawberry season rolls around, try my Strawberry Bruschetta Chicken for a sweet, fruit-forward twist.

Skip the takeout — this one’s ready in 15 minutes flat with a handful of pantry staples. Sliced chicken gets glossy in a sweet-savory sauce of soy, rice vinegar, honey, garlic, and ginger. Serve it over brown rice, quinoa, noodles, or cauliflower rice, and don’t skip the sesame seeds and scallions on top!

If you love the famous lettuce wraps from PF Chang’s, this lighter homemade version will hit the spot. A store-bought rotisserie chicken does the heavy lifting, so dinner comes together in a flash… tender chicken, crunchy water chestnuts, aromatic scallions, and a punchy sauce, all tucked into crisp lettuce cups.

These tasty skewers are made for grilling season! Juicy chicken, sweet caramelized pineapple, and crisp peppers and onion get brushed with a glossy teriyaki glaze and grilled until perfectly charred. No skewers? Spread everything loose on a flat top and toss it hibachi-style for even more caramelized edges.

All the sizzle of your favorite hibachi restaurant, minus the reservation. Just four main ingredients; chicken, sweet caramelized onions, bell peppers, and soy sauce in one pan, ready in about 35 minutes. Garnish with sesame seeds and scallions, and add a squirt of sriracha if you like a little heat!

Three ingredients. Five minutes. Zero cooking. Toss rotisserie chicken with a bag of coleslaw mix and your favorite salsa, finish with a squeeze of lime, and dinner is DONE… with 36 grams of protein and 6 grams of fiber. Dress it up with avocado, black beans, or fresh cilantro if you’re feeling fancy.

Rotisserie chicken gets saucy and scrumptious in this time-saving spin on the classic. Instead of ground beef, shredded rotisserie chicken soaks up a sweet-savory-tangy sauce with no added sugar… pile it onto slider buns and dig in. Use whatever mustard you love (yellow keeps it classic, but Dijon or spicy brown are great too), and add a dash of maple syrup if you like it sweeter. In my house, these are known as sloppy Joys!

This is one of those “dump it in and let it do its thing” recipes that feels almost too easy. Chicken, salsa, taco seasoning — that’s it. You walk away and come back to juicy, flavorful pulled chicken that makes about 5 cups, holds up beautifully in the fridge, and freezes great. Then take it in a hundred directions: tacos tonight, grain bowls tomorrow, lettuce cups the next day, coleslaw after that. It’s even fantastic stirred into scrambled eggs or piled onto a baked sweet potato. Minimal effort, maximum payoff!

And who says you can’t eat chicken salad for dinner?! This one is creamy, crunchy, and endlessly adaptable — pile it on whole grain toast, scoop it up with crackers, spoon it over greens, or go low-carb and serve it on crisp apple slices. It comes together in one bowl with no cooking required, which makes it a weeknight hero.

A protein-packed twist on my Buffalo Coleslaw that’s just too good to pass up! The creamy buffalo sauce blends up in seconds, then gets tossed with crunchy cabbage, carrots, and shredded chicken. Top with scallions and jalapeños and drizzle on extra hot sauce. Bonus: the recipe makes extra sauce on purpose so you can stash it in the fridge to use as a veggie dip or sandwich spread all week.

Let the slow cooker do the heavy lifting on this one! Butternut squash, bell pepper, jalapeño, and salsa verde simmer away while the chicken gets fall-apart tender, then beans and shredded chicken go back in for a hearty, fiber-rich bowl. Finish with scallions and cilantro. Cozy, nourishing, and perfect for the first chilly night of the season.

This one is a great big bowl of sunshine on a chilly day! Tender chicken, delicate orzo, sautéed carrots and onions, and a bright burst of lemon and dill come together in a soup that’s cozy and nourishing without a drop of cream. Grab a store-bought rotisserie chicken and it comes together with barely any fuss. Freeze a batch for the days you don’t feel like cooking — my family are all souper fans of this one, and I have a feeling yours will be too.
